What Does ‘Mould Free’ Coffee Really Mean?

At Pavement Roast, we care about where your coffee comes from just as much as how it tastes. The term mould free coffee appears often online, usually with claims that it is cleaner or healthier than regular coffee. So here is the straightforward truth.

Coffee naturally contains beneficial compounds such as magnesium, potassium, B vitamins and antioxidants. These are linked to lower risk of heart disease, type two diabetes and some cancers. This is supported by Harvard research and is well established.

The confusion usually comes from mycotoxins. These are compounds produced by certain moulds. They can form on coffee beans that have been stored incorrectly, often when crops are dried or handled poorly after harvest. Warm and humid environments increase the risk. Global coffee grading standards already include checks that look for defects, including those that can be linked to mould.

High quality growers and importers follow strict sorting and tasting protocols. These are not marketing tricks. They are recognised international standards used across the coffee industry to identify defective beans long before they reach a roastery.

At Pavement Roast, we only source speciality grade arabica. These beans come from farmers who focus on careful harvesting and processing. Every lot is cupped, tasted and inspected before roasting. The process looks for defects and also highlights flavour, aroma, sweetness, acidity and body. Only coffees that pass these tests are roasted for our customers.

When the supply chain is handled with care from the farm to export to roasting, the risk of mould related issues becomes extremely low. This is why speciality grade coffee is considered clean and high quality without needing mould free labels.

Our approach is simple. Work directly with skilled farmers, pay fairly, roast with precision and serve coffee that tastes outstanding because it has been looked after properly from the very beginning. Quality is not a marketing claim for us. It is a standard we protect at every step.
